Broccoli Greens
A simple recipe for cooking and enjoying the often-discarded outer leaves of broccoli, similar to cabbage.
Ingredients
- 1 pound Broccoli greens (outer leaves) (From one large head of broccoli)
- 6 cups Water (For boiling)
- 1 teaspoon Salt (Or to taste)
- 2 tablespoons Butter (Optional, for serving)
- 0.25 teaspoon Black pepper (Optional, for serving)
Instructions
- 1Cut the broccoli greens into smaller pieces and thoroughly wash them under cold running water.
- 2Bring a large pot of water to a boil and add salt. Add the thickest parts of the broccoli greens first. Wait until the water returns to a boil, then add the next thickest parts. Finally, add the thin, leafy parts last.
- 3Boil until the broccoli greens are tender, about 10-15 minutes, depending on the thickness of the leaves. Test for doneness with a fork.
- 4Drain the broccoli greens thoroughly. Serve plain or with butter and pepper.
