Ayoli

A classic aioli sauce from the South of France, featuring garlic, almonds, and egg yolk emulsified with olive oil.

Ingredients

  • 2 slices Crusty bread (Use a good quality crusty bread)
  • 0.25 cup Water (For soaking the bread)
  • 2 cloves Garlic (Chopped finely)
  • 6 whole Blanched almonds (Chopped very finely)
  • 1 large Egg yolk (From a fresh egg)
  • 0.5 cup Olive oil (Extra virgin olive oil)

Instructions

  1. 1Soak the crusts of bread in water until softened.
  2. 2Squeeze the soaked bread dry. Chop the garlic and blanched almonds very finely.
  3. 3In a bowl, combine the squeezed bread, chopped garlic, chopped almonds, and egg yolk. Mix well. Slowly drizzle in the olive oil while mixing continuously until the mixture forms a smooth, thick paste.
