Ayoli
A classic aioli sauce from the South of France, featuring garlic, almonds, and egg yolk emulsified with olive oil.
Ingredients
- 2 slices Crusty bread (Use a good quality crusty bread)
- 0.25 cup Water (For soaking the bread)
- 2 cloves Garlic (Chopped finely)
- 6 whole Blanched almonds (Chopped very finely)
- 1 large Egg yolk (From a fresh egg)
- 0.5 cup Olive oil (Extra virgin olive oil)
Instructions
- 1Soak the crusts of bread in water until softened.
- 2Squeeze the soaked bread dry. Chop the garlic and blanched almonds very finely.
- 3In a bowl, combine the squeezed bread, chopped garlic, chopped almonds, and egg yolk. Mix well. Slowly drizzle in the olive oil while mixing continuously until the mixture forms a smooth, thick paste.
