Artichokes a la Provencale
Artichokes baked with garlic, oil, lemon juice, salt, and pepper, showcasing simple Provençal flavors.
Ingredients
- 2 Large artichokes
- 2 tablespoons Olive oil
- 4 Garlic cloves (Whole)
- 0.5 teaspoon Salt (Or to taste)
- 0.25 teaspoon Black pepper (Freshly ground, or to taste)
- 1 tablespoon Lemon juice (Freshly squeezed)
- 4 cups Water (For parboiling)
Instructions
- 1Trim the artichokes: Cut off the stem and the top inch of the artichoke. Remove any tough outer leaves. Use kitchen shears to trim the thorny tips of the remaining leaves.
- 2Bring a pot of salted water to a boil. Add the artichokes and parboil for 15 minutes, or until a leaf can be easily pulled out.
- 3Carefully remove the artichokes from the boiling water and let them cool slightly. Use a spoon or knife to scrape out the fuzzy choke from the center of each artichoke.
- 4Preheat oven to 375°F (190°C). Place the artichokes in a baking dish. Drizzle with olive oil, and season with salt and pepper. Tuck the whole garlic cloves around the artichokes.
- 5Bake for 30-45 minutes, or until the artichokes are tender. Turn them over in the oil occasionally during baking.
- 6Remove the garlic cloves. Serve the artichokes hot, drizzled with the baking oil and a squeeze of fresh lemon juice.
