Apricot Jam
A simple recipe for making apricot jam.
Ingredients
- 0.75 pound Apricots (About 340g)
- 0.75 pound Granulated Sugar (About 340g)
- 2 tablespoons Lemon Juice (Freshly squeezed)
Instructions
- 1Wash the apricots thoroughly. Pit and chop them into small pieces.
- 2In a large, heavy-bottomed saucepan, combine the chopped apricots, sugar, and lemon juice.
- 3Bring the mixture to a boil over medium heat, stirring constantly until the sugar is dissolved. Once boiling, reduce the heat to low and simmer gently, stirring occasionally, until the jam thickens. This will take about 20-30 minutes. To test for doneness, place a small spoonful of jam on a chilled plate. If it sets quickly and wrinkles when pushed with your finger, it's ready.
- 4Carefully pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace. Seal the jars immediately. Process in a boiling water bath for 10 minutes for long-term storage (optional).
