Apricot Fritters
A simple recipe for apricot fritters, using fresh or tinned apricots. Soaking in brandy is optional.
Ingredients
- 12 halves Fresh or tinned apricots (Not too ripe)
- 0.25 cup Brandy (Optional)
- 0.25 cup Powdered sugar (For soaking)
- 1 cup All-purpose flour
- 1 Egg
- 0.5 cup Milk
- 1 tablespoon Granulated sugar (For batter)
- 0.25 teaspoon Salt (For batter)
- 3 cups Vegetable oil (For frying)
- 0.25 cup Powdered sugar (For dusting)
Instructions
- 1If using fresh apricots, peel them. Cut each apricot in half and remove the pit. Optionally, soak the apricot halves in brandy for at least 30 minutes. If soaking, drain the apricots well.
- 2In a bowl, whisk together the all-purpose flour, egg, milk, granulated sugar, and salt until smooth. The batter should be thick enough to coat the apricots.
- 3Pour vegetable oil into a deep saucepan or fryer and heat to 350°F (175°C). A wire frying basket is helpful.
- 4Dip each apricot half in powdered sugar, then dip it into the batter, ensuring it's fully coated. Carefully drop the battered apricot into the hot oil, one at a time. Fry for 2-3 minutes per side, or until golden brown.
- 5Remove the fritters from the oil and place them on a plate lined with paper towels to drain excess oil. Sprinkle with powdered sugar and serve immediately.
