Apple Custard
A classic apple custard dessert, perfect for using seasonal apples. This recipe provides a simple and delicious way to enjoy the flavors of apple and cinnamon or nutmeg.
Ingredients
- 2 pounds Apples (such as Granny Smith or Honeycrisp) (Choose apples with good flavor. Original recipe calls for 4 pounds, which is excessive for modern portions.)
- 0.75 cup Water (Slightly more than a pint in original recipe, adjusted for smaller apple quantity.)
- 0.5 cup Granulated sugar (Adjust to taste depending on apple sweetness. Original recipe calls for 1 pound, which is excessive.)
- 0.5 teaspoon Ground cinnamon (Or use nutmeg if preferred.)
- 4 Large eggs
- 1 tablespoon Cinnamon sugar (For topping (optional))
Instructions
- 1Peel, core, and chop the apples into small pieces.
- 2Place the chopped apples and water in a saucepan. Simmer over medium heat until the apples are very tender, about 15 minutes.
- 3Add the sugar and cinnamon (or nutmeg) to the cooked apples. Stir well to combine.
- 4In a separate bowl, whisk the eggs well. Gradually pour the beaten eggs into the apple mixture, stirring constantly to prevent curdling.
- 5Return the mixture to the saucepan. Cook over low heat, stirring constantly, until the custard begins to thicken. Alternatively, place the mixture in a heatproof jug and set the jug in a saucepan of simmering water (bain-marie). Cook, stirring occasionally, until thickened.
- 6Pour the custard into individual glasses or bowls. Sprinkle with cinnamon sugar, if desired. Serve warm or chilled.
