These fritters are a variation on custard fritters, offering different flavor profiles by incorporating almond, chocolate, coffee, or vanilla. They are made by creating a custard, slicing it, coating it in batter, and frying until golden brown.

Ingredients

  • 1.25 cups Heavy Cream (Original recipe calls for half a pint)
  • 1 small Cinnamon Stick (For infusing the cream)
  • 1 strip Lemon Peel (For infusing the cream)
  • 5 Egg Yolks
  • 2 tablespoons All-Purpose Flour
  • 3 ounces Granulated Sugar (Approximately 1/3 cup)
  • 1 teaspoon Flavoring (Choose one: powdered chocolate, almond extract, coffee extract, or vanilla extract)
  • 0.5 teaspoon Ground Cinnamon (For sprinkling)
  • 2 tablespoons Powdered Sugar (For dusting)
  • 1 batch Batter (Use your favorite batter recipe or a simple mix of flour, egg, and milk)
  • 3 cups Vegetable Oil (For frying)

Instructions

  1. 1In a saucepan, combine the heavy cream, cinnamon stick, and lemon peel. Bring to a simmer over medium heat. Remove from heat and let steep for 15 minutes to infuse the flavors.
  2. 2Remove the cinnamon stick and lemon peel from the cream. In a bowl, whisk together the egg yolks, flour, and sugar until smooth. Gradually whisk in the infused cream until well combined. Stir in your chosen flavoring (powdered chocolate, almond extract, coffee extract, or vanilla extract).
  3. 3Butter a pie dish or baking pan. Pour the custard mixture into the prepared dish. Steam the custard until it is set but still slightly wobbly in the center. This can be done by placing the dish in a larger pan filled with water and baking in a preheated oven at 325°F (160°C) for about 20-25 minutes, or by steaming on the stovetop.
  4. 4Let the custard cool completely in the dish. Once cooled, refrigerate for at least 1 hour to firm up. Cut the custard into slices about 1/2 inch thick and 1 1/2 inches long.
