Step 1
Wash mango. Peel off the skin n cut it into lengthwise. Keep aside. Take a clay pot n add to it lengthwise cut onions, ginger n slit green chillies. Also add curry leaves. Squeeze with your hand very well for 2 mins. This will enhance the taste of the curry.
Step 2
Keep the squeezed portion in one corner of the clay pot. In another corner of the same pot add chillie powder, turmeric, coriander powder n one tbsp of coconut oil n mix it. After mixing the masalas with hand then finally mix them with the squeezed item already kept at the corner of the pot.
Step 3
Mix all well n let it get marinated for 10 mins with closed lid.
Step 4
In the clay pot add 1 cup of diluted coconut milk n mix well with the marinated items. Heat the stove n keep the clay pot . Add to it the sliced mango pieces. Let it boil.
Step 5
When it starts boiling close with the lid n cook in medium flame. for 5 mins. Finally off the stove n add to it 1/2 cup thick coconut milk.
Step 6
Season in oil mustard, chopped onions, dry red chillies n curry leaves. Onions should turn brown. Close the lid n serve after 10 mins.
