Step 1
Take a big bowl, add 500 gm all purpose flour, 1/4 tbsp salt, 1/2 tbsp ajwain, 2 tbsp oil and make a soft dough
Step 2
Take a cookware, heat 3 tbsp oil, add 1/2 tbsp cumin seeds,1/4 tbsp ajwain, 1/2 tbsp fennel seeds, 1/2 tsp fenugreek seeds and cook till it gets brown, now add 2 chopped onions, cook for 2 minutes, now add 2-3 chopped green chillies, now add boiled mashed potatoes, now add 1/2 tbsp turmeric powder, 1/2 coriander powder, 1 tsp red chilli powder,1/4 tbsp salt, mix it well and cook for 1-2 minutes and add 1/2 tbsp chaat masala once it cools down
Step 3
Now make a dough ball of 50 gm, fill the stuffing and roll it in circular shape
Step 4
Take a kadhai Or any other cookware heat oil and deep fry these kachori, cook till it gets brown form both side and serve it hot
