saoji jackfruit curry

Step 1
Heat up the frying pan and roast all the spices on low heat for 3-4 minutes. keep the roasted spices aside and dry roast the coconut for 1-2 minutes. After the spices and coconut have cooled down grind them into a smooth paste in a grinder. The Saoji special masala is ready
Step 2
In frying add some oil and saute roughly chopped onions. Cook the onions until they are slightly brown, add chopped tomatoes, and cook for another 4-5 minutes on low flame. Let the veggies cool down and then make a smooth paste using a grinder.
Step 3
In a pot add some oil. After the oil is warmed up, add the onion tomato paste. Cook the paste for 5 minutes and continuously keep stirring it. Add the Saoji Masala and salt, and cook it well. You can add little water to the pot if the mixture starts sticking to the bottom of the pan.
Step 4
Add the jackfruit pieces and stir them well in the masala. Cook the Jackfruit in the masala for 2-3 minutes. Add one glass of water to the pot and let the curry cook on a medium flame for 30 minutes. Garnish it with coriander, and add lemon juice according to your taste.
